Ingredients:
- 6 cups Special K Cereal (approx. 180g)
- 1 cup light corn syrup (240ml)
- 1 cup granulated sugar (200g)
- 1 cup creamy peanut butter (250g)
- 1 cup semi sweet chocolate chips (170g)
- 1 cup butterscotch chips (170g)
Instructions:
- Line a 9x13 inch pan with parchment paper. In a large heavy-bottomed saucepan, combine the light corn syrup and granulated sugar over medium heat. Stir constantly until the mixture just begins to bubble around the edges and the sugar is fully dissolved. Remove from heat immediately to prevent the bars from becoming too hard.
- Stir the creamy peanut butter into the hot sugar mixture until smooth. Gently fold in the Special K cereal with a spatula until all flakes are evenly coated. Transfer the mixture to the prepared pan and press down lightly and evenly.
- In a microwave-safe glass bowl, combine the chocolate chips and butterscotch chips. Heat in 30-second intervals, stirring between each, until completely melted and smooth. Spread the chocolate mixture evenly over the cereal base. Let the bars sit at room temperature for at least 1 hour, or until the chocolate is firm before slicing into 24 bars.
