  • 1/8 teaspoon kosher salt (or to taste)
  • Freshly ground black pepper, a few grinds
  • Optional: 1/8 teaspoon dried herbs (chives, oregano, or mixed herbs)
  • Optional finishing: 1 tablespoon chopped fresh herbs (chives, parsley) or salsa for topping

Instructions:

  1. Prep: Dice vegetables and meats, shred cheese, and lightly grease the interior of a 12–16 oz microwave-safe mug with oil or butter.
  2. Build base: Crack 2 large eggs into the mug. Add 2 tablespoons milk, 1/8 teaspoon kosher salt, and a few grinds of black pepper. Whisk vigorously with a fork until yolks and whites are fully combined and mixture is slightly frothy.
  3. Add mix-ins: Stir in small-diced vegetables, pre-cooked meats, and about half the cheese. If using raw, watery vegetables (mushrooms, tomatoes) or dense items, consider briefly sautéing them first for best texture.
  4. Microwave, first interval: Microwave on HIGH for 30–40 seconds (timing varies by microwave wattage).
  5. Stir & finish: Remove the mug, stir the top and edges to ensure even cooking, then sprinkle remaining cheese on top. Microwave again for 20–40 seconds until mostly set. Visual cue: center should be set with a slightly glossy surface; avoid overcooking until rubbery.
  6. Rest & serve: Let the omelet rest for 30–60 seconds to finish setting. Top with chopped fresh herbs or salsa if desired and serve directly in the mug.
  7. Doneness tips: If unsure, use short additional bursts of 10–15 seconds rather than one long interval. Microwave wattage affects timing—start conservatively and add time as needed.
