Ingredients:
- 2 lbs (900g) ground beef (80/20 blend recommended)
- 1 package (6 oz / 170g) Stove Top Stuffing Mix (any flavour)
- 1 cup (240ml) beef broth (or chicken broth)
- 1 medium yellow onion, finely chopped
- 2 large eggs, lightly beaten
- 1/4 cup (60ml) ketchup
- 2 tablespoons Worcestershire sauce
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt (optional, taste after mixing)
- 1/2 cup (120ml) ketchup (for glaze, optional)
- 2 tablespoons brown sugar (for glaze, optional)
- 1 tablespoon Dijon mustard (for glaze, optional)
Instructions:
- Preheat oven to 350°F (175°C).
- In a large bowl, combine Stove Top stuffing mix and beef broth. Let sit for 5 minutes to soften.
- Sauté the chopped onion until translucent and softened.
- Add the softened onion, ground beef, eggs, ketchup, Worcestershire sauce, garlic powder, salt, and pepper to the bowl with the stuffing mix.
- Gently mix all ingredients until just combined. Do not overmix!
- Transfer the mixture to the loaf pan and shape it into a loaf.
- In a small bowl, whisk together ketchup, brown sugar, and Dijon mustard (if using).
- Spread the glaze evenly over the top of the meatloaf (optional).
- Bake for 50-55 minutes, or until the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 10 minutes before slicing and serving.
