Ingredients:

  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tbsp vegetable oil
  • 4 brioche buns
  • 4 slices cheddar cheese
  • 1 cup iceberg lettuce, shredded
  • 1 large tomato, sliced
  • 1/2 red onion, thinly sliced
  • 4 tbsp mayonnaise

Instructions:

  1. Gently combine the ground beef, salt, and pepper in a bowl, avoiding overworking the meat to maintain a tender texture.
  2. Divide the beef into four 4-oz portions and shape them into discs approximately 3/4 inch thick.
  3. Use your thumb to create a shallow indentation (thumbprint) in the center of each patty to ensure even cooking.
  4. Preheat the grill to medium-high heat (approx. 400°F/200°C) and lightly oil the grates.
  5. Place patties on the grill and leave undisturbed for 4–5 minutes until a deep brown crust forms.
  6. Flip the patties using a wide spatula.
  7. Immediately place a slice of cheddar cheese on each patty and grill for another 3–4 minutes.
  8. Verify doneness with a meat thermometer: 135°F (57°C) for medium-rare or 145°F (63°C) for medium.
  9. Lightly toast the brioche buns on the grill for 30 seconds until golden.
  10. Allow the burgers to rest for 3–5 minutes to redistribute juices before assembling with mayonnaise, lettuce, tomato, and onion.
