- 1 lb ground beef (80/20 lean-to-fat ratio)
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tbsp vegetable oil
- 4 brioche buns
- 4 slices cheddar cheese
- 1 cup iceberg lettuce, shredded
- 1 large tomato, sliced
- 1/2 red onion, thinly sliced
- 4 tbsp mayonnaise
Instructions:
- Gently combine the ground beef, salt, and pepper in a bowl, avoiding overworking the meat to maintain a tender texture.
- Divide the beef into four 4-oz portions and shape them into discs approximately 3/4 inch thick.
- Use your thumb to create a shallow indentation (thumbprint) in the center of each patty to ensure even cooking.
- Preheat the grill to medium-high heat (approx. 400°F/200°C) and lightly oil the grates.
- Place patties on the grill and leave undisturbed for 4–5 minutes until a deep brown crust forms.
- Flip the patties using a wide spatula.
- Immediately place a slice of cheddar cheese on each patty and grill for another 3–4 minutes.
- Verify doneness with a meat thermometer: 135°F (57°C) for medium-rare or 145°F (63°C) for medium.
- Lightly toast the brioche buns on the grill for 30 seconds until golden.
- Allow the burgers to rest for 3–5 minutes to redistribute juices before assembling with mayonnaise, lettuce, tomato, and onion.
