Ingredients:
- 2 lbs boneless, skinless chicken thighs
- 1 tsp sea salt
- 1/2 tsp cracked black pepper
- 1 tbsp olive oil
- 1/2 cup honey
- 1/4 cup fresh lime juice
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1 tbsp lime zest
Instructions:
- Rub the chicken thighs with olive oil, salt, and pepper, then place them in the bottom of the slow cooker in a single layer.
- In a small bowl, whisk together the honey, lime juice, garlic, cumin, and smoked paprika until smooth.
- Pour the glaze mixture evenly over the chicken.
- Cover and cook on Low for 6 hours until the chicken is tender enough to pull apart with a fork.
- Remove the chicken to a platter and shred using two forks.
- Pour off about half of the excess liquid from the pot and stir in the fresh lime zest.
- Return the shredded meat to the slow cooker and toss until the chicken is coated in a thick, velvety glaze.
