Ingredients:

  • 2 lbs boneless, skinless chicken thighs
  • 1 tsp sea salt
  • 1/2 tsp cracked black pepper
  • 1 tbsp olive oil
  • 1/2 cup honey
  • 1/4 cup fresh lime juice
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1 tbsp lime zest

Instructions:

  1. Rub the chicken thighs with olive oil, salt, and pepper, then place them in the bottom of the slow cooker in a single layer.
  2. In a small bowl, whisk together the honey, lime juice, garlic, cumin, and smoked paprika until smooth.
  3. Pour the glaze mixture evenly over the chicken.
  4. Cover and cook on Low for 6 hours until the chicken is tender enough to pull apart with a fork.
  5. Remove the chicken to a platter and shred using two forks.
  6. Pour off about half of the excess liquid from the pot and stir in the fresh lime zest.
  7. Return the shredded meat to the slow cooker and toss until the chicken is coated in a thick, velvety glaze.
