Ingredients:
- Large eggs — 3 (about 150 g total)
- Whole milk or half-and-half — 1 tbsp (15 ml)
- Kosher salt — 1/4 tsp (1.5 g)
- Freshly ground black pepper — 1/8 tsp (0.5 g)
- Unsalted butter — 1 tbsp (14 g) OR neutral oil (canola/vegetable) 1 tbsp (15 ml)
- Shredded cheddar or pepper jack cheese — 1/3 cup (35 g)
- Cooked bacon, chopped — 2 slices (about 30 g) OR cooked chorizo 1/4 cup (60 g) OR canned black beans, rinsed 1/4 cup (60 g)
- Bell pepper, thinly sliced and sautéed — 1/4 cup (40 g)
- Yellow onion, thinly sliced and sautéed — 1/4 cup (40 g)
- Fresh baby spinach, wilted — 1/2 cup (15 g)
- Avocado, sliced — 1/4 avocado (about 30 g)
- Fresh cilantro or chives, chopped — 1 tbsp (6 g)
- Optional: salsa or hot sauce — 2 tbsp (30 g)
Instructions:
- Prepare fillings: cook meats first (crisp bacon, drain and chop; or crumble and brown chorizo). Sauté onions and peppers in a little oil until softened (about 4–5 minutes), add spinach to wilt, season lightly, then set fillings aside and wipe pan clean.
- Whisk the eggs: crack eggs into a bowl, add milk, salt, and pepper; whisk until completely combined and slightly frothy.
- Heat the pan: over medium-low heat, melt butter or heat oil in the clean skillet until shimmering but not browned.
- Cook the omelet 'tortilla': pour egg mixture into pan and immediately swirl to create an even, thin layer (aim for 1/8–1/4 inch / 3–6 mm). Reduce heat slightly and cook gently until edges set and surface is mostly set but slightly glossy, about 1.5–2 minutes.
- Add fillings and melt cheese: sprinkle cheese in a thin line down the center, top with warmed fillings and avocado slices if using. Cover briefly (30–60 seconds) to melt cheese if desired.
- Fold or roll: using a spatula, fold one long side over the filling (or fold in half), then slide onto a plate seam-side down. For a roll, fold short sides in, then roll away from you. Let rest 30 seconds to set.
- Finish and serve: garnish with fresh herbs and salsa or hot sauce on the side. Serve immediately with suggested sides like potatoes or a light salad.
