Ingredients:

  • 1/2 cup (120 ml) Extra Virgin Olive Oil
  • 1/4 cup (60 ml) Fresh Lemon Juice
  • 2 cloves Garlic, minced (about 1 teaspoon)
  • 1 tablespoon (15 ml) Red Wine Vinegar
  • 1 teaspoon Dried Oregano
  • 1/2 teaspoon Dried Basil
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions:

  1. In a bowl (or jar), whisk together the olive oil, lemon juice, red wine vinegar, minced garlic, oregano, basil, salt, and pepper.
  2. Whisk vigorously until the ingredients are well combined and slightly emulsified. It should look a bit cloudy and less oily.
  3. Give it a taste! Adjust salt, pepper, or lemon juice to your liking. Remember, flavours will develop over time.
  4. For best results, let the dressing sit for at least 30 minutes before serving. This allows the flavors to meld together.
  5. Before using, shake the jar or whisk the dressing again as the oil and vinegar may separate.
