Ingredients:
- 2 lbs boneless, skinless chicken thighs
- 1/3 cup fresh lime juice
- 2 tbsp honey
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
- 1 tbsp extra virgin olive oil
Instructions:
- In a small bowl, whisk together the lime juice, honey, minced garlic, cumin, paprika, salt, and pepper.
- Place the chicken thighs in the bottom of the slow cooker in a single layer.
- Pour the marinade over the meat, ensuring every piece is thoroughly coated.
- Cover and cook on LOW for 6 hours until the internal temperature reaches 165°F (74°C).
- Optional: Remove chicken and sear each side in a hot pan with olive oil for 2 minutes until mahogany-colored.
- Garnish with chopped cilantro and serve with fresh lime wedges.
