Ingredients:

  • 2 lbs boneless, skinless chicken thighs
  • 1/3 cup fresh lime juice
  • 2 tbsp honey
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges
  • 1 tbsp extra virgin olive oil

Instructions:

  1. In a small bowl, whisk together the lime juice, honey, minced garlic, cumin, paprika, salt, and pepper.
  2. Place the chicken thighs in the bottom of the slow cooker in a single layer.
  3. Pour the marinade over the meat, ensuring every piece is thoroughly coated.
  4. Cover and cook on LOW for 6 hours until the internal temperature reaches 165°F (74°C).
  5. Optional: Remove chicken and sear each side in a hot pan with olive oil for 2 minutes until mahogany-colored.
  6. Garnish with chopped cilantro and serve with fresh lime wedges.
