Ingredients:

  • 1 cup (120g) yellow cornmeal
  • 1 cup (125g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1 tablespoon (15g) baking powder
  • 1/2 teaspoon (2g) salt
  • 1 cup (240ml) milk
  • 2 large eggs
  • 1/4 cup (60ml) vegetable oil

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine dry ingredients: cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the wet ingredients: milk, eggs, and oil.
  4. Pour wet mixture into dry ingredients; stir gently until just combined (avoid overmixing).
  5. Pour the batter into the greased baking dish or skillet.
  6. Bake for 20-25 minutes, or until golden brown on top and a toothpick inserted comes out clean.
  7. Cool slightly before slicing and serving.
