Ingredients:
- 1 cup (120g) yellow cornmeal
- 1 cup (125g) all-purpose flour
- 1/4 cup (50g) granulated sugar
- 1 tablespoon (15g) baking powder
- 1/2 teaspoon (2g) salt
- 1 cup (240ml) milk
- 2 large eggs
- 1/4 cup (60ml) vegetable oil
Instructions:
- Preheat oven to 400°F (200°C).
- In a mixing bowl, combine dry ingredients: cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together the wet ingredients: milk, eggs, and oil.
- Pour wet mixture into dry ingredients; stir gently until just combined (avoid overmixing).
- Pour the batter into the greased baking dish or skillet.
- Bake for 20-25 minutes, or until golden brown on top and a toothpick inserted comes out clean.
- Cool slightly before slicing and serving.
