Ingredients:

  • 2 cups (200g) crushed pretzels (regular or gluten-free)
  • ½ cup (100g) granulated sugar
  • ½ cup (113g) unsalted butter, melted
  • 8 oz (225g) cream cheese, softened
  • 1 cup (120g) powdered sugar
  • 1 cup (240ml) whipped topping or heavy cream, whipped
  • 1 package (3 oz or 85g) flavored gelatin (e.g., strawberry, raspberry)
  • 2 cups (480ml) boiling water
  • 1 cup (240ml) cold water
  • 1 cup (150g) fresh or frozen fruit (e.g., strawberries, blueberries)

Instructions:

  1. Preheat your oven to 350°F (175°C) if you prefer a baked crust (optional).
  2. In a mixing bowl, combine crushed pretzels, granulated sugar, and melted butter. Press the mixture firmly into the bottom of the baking dish. If baking, bake for 10 minutes, then cool completely.
  3. In a separate bowl, beat softened cream cheese and powdered sugar until smooth. Fold in whipped topping until well combined. Spread evenly over the cooled pretzel crust.
  4. In a bowl, dissolve the gelatin in boiling water, stirring until fully melted. Add cold water and mix well. Allow the mixture to cool slightly, then stir in fresh or frozen fruit.
  5. Pour the jello and fruit mixture over the cream cheese layer.
  6. Refrigerate for at least 2 hours, or until set.
  7. Cut into squares and enjoy!
