Ingredients:

  • 1 (20 oz / 565 g) can crushed pineapple in juice
  • 1/4 cup (50 g) granulated sugar
  • 2 tbsp honey
  • 1 tbsp cornstarch or arrowroot powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • Pinch of ground cloves
  • 1/4 tsp red pepper flakes
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • Optional: 1/4 cup chopped pecans or walnuts
  • Optional: 1/4 cup shredded coconut

Instructions:

  1. Drain excess juice from canned pineapple or prepare fresh pineapple by peeling, coring, and chopping into chunks.
  2. In a medium saucepan, combine crushed pineapple, sugar, honey, ground cinnamon, ginger, cloves, red pepper flakes, and lemon juice. Stir well.
  3. Bring to a gentle simmer over medium heat, stirring occasionally.
  4. Dissolve cornstarch in a tablespoon of water, then add to the simmering mixture. Continue cooking and stirring until mixture thickens, about 3-5 minutes.
  5. Remove from heat and stir in vanilla extract. Adjust sweetness or spice as desired.
  6. Fold in nuts or shredded coconut if using. Serve immediately or chill for 30 minutes to meld flavors.
