Ingredients:
- 1 (20 oz / 565 g) can crushed pineapple in juice
- 1/4 cup (50 g) granulated sugar
- 2 tbsp honey
- 1 tbsp cornstarch or arrowroot powder
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- Pinch of ground cloves
- 1/4 tsp red pepper flakes
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- Optional: 1/4 cup chopped pecans or walnuts
- Optional: 1/4 cup shredded coconut
Instructions:
- Drain excess juice from canned pineapple or prepare fresh pineapple by peeling, coring, and chopping into chunks.
- In a medium saucepan, combine crushed pineapple, sugar, honey, ground cinnamon, ginger, cloves, red pepper flakes, and lemon juice. Stir well.
- Bring to a gentle simmer over medium heat, stirring occasionally.
- Dissolve cornstarch in a tablespoon of water, then add to the simmering mixture. Continue cooking and stirring until mixture thickens, about 3-5 minutes.
- Remove from heat and stir in vanilla extract. Adjust sweetness or spice as desired.
- Fold in nuts or shredded coconut if using. Serve immediately or chill for 30 minutes to meld flavors.
