Ingredients:
- 1 medium (150g) yellow onion, finely diced
- 3 cloves (15g) garlic, minced
- 1 tbsp (15g) fresh ginger, grated
- 1 tbsp (15ml) avocado oil
- 2 medium (300g) gold potatoes, peeled and cubed into ½ inch pieces
- 1 can (15 oz / 425g) chickpeas, drained and rinsed
- 1 cup (240ml) canned crushed tomatoes
- 1 can (13.5 oz / 400ml) light coconut milk
- 1 tsp (2g) ground cumin
- 1 tsp (2g) ground coriander
- ½ tsp (1g) ground turmeric
- 1 tsp (2g) garam masala
- ½ tsp (1g) red chili flakes
- 1 large bunch (500g) Swiss chard, stalks diced and leaves chopped
- 1 tbsp (15ml) fresh lime juice
- ¼ cup (10g) fresh cilantro, chopped
Instructions:
- Separate the Swiss chard leaves from the stalks. Finely dice the stalks and roughly chop the leaves into 2-inch ribbons.
- Heat oil in a large pot over medium heat. Add the diced onion and diced chard stalks, sautéing for 5–7 minutes until translucent and softened.
- Stir in the minced garlic and grated ginger, cooking for another 60 seconds until fragrant.
- Stir in the ground cumin, coriander, turmeric, and red chili flakes, toasting the spices for 1 minute.
- Add the cubed potatoes and chickpeas, stirring to coat them evenly in the spice mixture.
- Pour in the crushed tomatoes and light coconut milk. Bring to a gentle simmer, then reduce heat to low, cover, and cook until potatoes are tender.
- Stir in the chopped Swiss chard leaves and garam masala, cooking for an additional 3 minutes until the greens are wilted but still vibrant.
- Remove from heat, stir in the fresh lime juice, and garnish with chopped cilantro before serving.
