Ingredients:

  • 1 cup (226g) full-fat cottage cheese
  • 1 large egg
  • 1 tsp (6g) baking powder
  • 1/2 cup (60g) all-purpose flour, plus extra for dusting
  • Pinch of salt
  • Everything bagel seasoning (optional)
  • Sesame seeds (optional)
  • Poppy seeds (optional)
  • Egg wash (1 egg whisked with 1 tbsp water, optional)

Instructions:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine cottage cheese and egg. Mix until well combined and fairly smooth.
  3. Add baking powder, flour, and salt to the wet ingredients.
  4. Mix until a sticky dough forms. Be careful not to overmix!
  5. Lightly flour your hands. Divide the dough into 4 equal portions. Roll each portion into a rope about 6-8 inches long. Join the ends to form a bagel shape, pinching the seam together securely.
  6. If desired, brush bagels with egg wash. Sprinkle with everything bagel seasoning, sesame seeds, or poppy seeds.
  7. Place bagels on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
  8. Let the bagels cool on a wire rack before slicing and enjoying.
