Ingredients:
- 1 cup (226g) full-fat cottage cheese
- 1 large egg
- 1 tsp (6g) baking powder
- 1/2 cup (60g) all-purpose flour, plus extra for dusting
- Pinch of salt
- Everything bagel seasoning (optional)
- Sesame seeds (optional)
- Poppy seeds (optional)
- Egg wash (1 egg whisked with 1 tbsp water, optional)
Instructions:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, combine cottage cheese and egg. Mix until well combined and fairly smooth.
- Add baking powder, flour, and salt to the wet ingredients.
- Mix until a sticky dough forms. Be careful not to overmix!
- Lightly flour your hands. Divide the dough into 4 equal portions. Roll each portion into a rope about 6-8 inches long. Join the ends to form a bagel shape, pinching the seam together securely.
- If desired, brush bagels with egg wash. Sprinkle with everything bagel seasoning, sesame seeds, or poppy seeds.
- Place bagels on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
- Let the bagels cool on a wire rack before slicing and enjoying.
