Ingredients:

  • 1 1/2 cups (192g) all-purpose flour
  • 1 teaspoon (5g) baking soda
  • 1/2 teaspoon (2.5g) ground cinnamon
  • 1/4 teaspoon (1.25g) salt
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) vegetable oil (canola or sunflower oil work great)
  • 2 large eggs
  • 1 teaspoon (5ml) vanilla extract
  • 1 cup (about 3 medium) mashed ripe bananas (approx. 225g)
  • 1/2 cup (85g) chopped walnuts or pecans (optional)
  • 1/2 cup (85g) chocolate chips (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, and salt.
  3. In a large bowl, whisk together sugar, oil, eggs, and vanilla extract until well combined.
  4. Stir in the mashed bananas until just combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix!
  6. Gently fold in chopped nuts or chocolate chips, if using.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean (or with just a few moist crumbs).
  9. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
