Ingredients:
- 1 1/2 cups (192g) all-purpose flour
- 1 teaspoon (5g) baking soda
- 1/2 teaspoon (2.5g) ground cinnamon
- 1/4 teaspoon (1.25g) salt
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) vegetable oil (canola or sunflower oil work great)
- 2 large eggs
- 1 teaspoon (5ml) vanilla extract
- 1 cup (about 3 medium) mashed ripe bananas (approx. 225g)
- 1/2 cup (85g) chopped walnuts or pecans (optional)
- 1/2 cup (85g) chocolate chips (optional)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, cinnamon, and salt.
- In a large bowl, whisk together sugar, oil, eggs, and vanilla extract until well combined.
- Stir in the mashed bananas until just combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix!
- Gently fold in chopped nuts or chocolate chips, if using.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean (or with just a few moist crumbs).
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
