Ingredients:

  • 4 large Roma Tomatoes, ripe and diced
  • 1/2 cup Fresh Basil Leaves, roughly chopped
  • 2 medium Garlic Cloves, minced
  • 4 Tbsp Extra Virgin Olive Oil (2 Tbsp for bruschetta, 2 Tbsp for bread)
  • 1 tsp Balsamic Vinegar
  • 1/2 tsp Kosher Salt (for bruschetta)
  • 1/4 tsp Freshly Ground Black Pepper (for bruschetta)
  • 1 lb Lean Ground Turkey (85/15 recommended)
  • 1/4 cup Panko Breadcrumbs
  • 1 large Egg, lightly beaten
  • 1 tsp Worcestershire Sauce
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Garlic Powder
  • 3/4 tsp Kosher Salt (for patties)
  • 1/2 tsp Freshly Ground Black Pepper (for patties)
  • 1 Tbsp Olive Oil or Grapeseed Oil (for grilling)
  • 8 slices Ciabatta or Sourdough Bread, 1 inch thick
  • 4 slices Fresh Mozzarella Cheese (1 oz each)

Instructions:

  1. In a medium bowl, gently combine the diced tomatoes, chopped basil, minced garlic, 2 Tbsp olive oil, balsamic vinegar, salt, and pepper. Stir gently, cover, and allow the mixture to sit at room temperature for at least 15 minutes to allow the flavors to marry.
  2. In a large bowl, whisk the egg, panko breadcrumbs, Worcestershire sauce, oregano, garlic powder, salt, and pepper. Let sit for 2 minutes. Add the ground turkey. Using cold hands, gently combine the ingredients until just mixed, taking care not to overmix.
  3. Divide the mixture into 4 equal portions. Form into discs slightly larger than your bread slices. Create a small dimple in the center of each patty to prevent swelling during cooking. Place on parchment paper and chill in the fridge for 10 minutes to help them hold their shape.
  4. Heat the grill or grill pan to a medium-high heat. Brush lightly with the grilling oil. Place the chilled turkey patties on the hot grill. Cook undisturbed for 5–7 minutes per side, until the internal temperature reaches 165°F (74°C). Remove and set aside.
  5. While the patties rest, brush both sides of the ciabatta or sourdough slices with the remaining 2 Tbsp olive oil. Grill quickly (about 1–2 minutes per side) until beautifully golden and toasted.
  6. Place a slice of mozzarella atop each warm turkey patty. Melt the cheese by closing the grill lid for 1 minute or flashing under a hot broiler for 30 seconds.
  7. Place one toasted bread slice onto the serving plate. Top with the cheesy turkey patty. Spoon a generous helping of the prepared bruschetta topping over the melted cheese and turkey. Serve immediately.
