Instructions:

- Whisk the Egg Yolks: In the large bowl with the egg yolks, whisk in the sugar and salt until pale and slightly thickened.
- Add Melted Butter and Milk: Gradually whisk in the melted and cooled butter, followed by the milk and vanilla. Mix until well combined.
- Combine Dry and Wet Ingredients: In a separate bowl, whisk together the remaining flour and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix!
- Incorporate the Sponge: Gently fold the sponge into the batter until just combined.
- Whip the Egg Whites: Using an electric mixer, beat the egg whites until stiff, but not dry, peaks form.
- Fold in the Egg Whites: Gently fold the whipped egg whites into the batter in two additions. Be careful not to deflate the whites; this keeps the waffles light and fluffy.
- Second Proof: Cover the batter and let rest for 30 minutes. This allows the gluten to relax and the yeast to work its magic even further.
