Ingredients:

  • ounces (225g) low-moisture Mozzarella block, cut into 12 sticks
  • /2 cup (60g) All-Purpose Flour
  • /4 teaspoon Fine Sea Salt (for flour)
  • /4 teaspoon Black Pepper (for flour)
  • Large Eggs, lightly whisked
  • cup (100g) Whole Wheat Panko Breadcrumbs
  • /4 cup (25g) Grated Parmesan Cheese
  • teaspoon Dried Oregano
  • /2 teaspoon Garlic Powder
  • Non-stick Cooking Spray

Instructions:

  1. Prep the Cheese: Cut the mozzarella block into 12 uniform sticks. Place the sticks on a parchment-lined baking sheet and freeze for at least 45 minutes. This is crucial to prevent melting during the high-heat bake.
  2. Set Up Breading Stations: Prepare three shallow dishes. Station 1: Whisk flour, salt, and pepper. Station 2: Whisk eggs. Station 3: Combine panko, Parmesan, oregano, and garlic powder.
  3. Bread the Sticks: Working quickly with the frozen cheese, dredge each stick thoroughly first in Flour (shaking off excess), then dip in Egg, and finally coat well in the Panko mix, pressing firmly to adhere.
  4. The Second Freeze: Place the breaded sticks back onto the parchment-lined sheet. Freeze again for an additional 15 minutes while the oven preheats. This sets the crust for your Skinny Baked Mozzarella Sticks.
  5. Preheat & Prepare Rack: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and place a wire rack on top. Lightly spray the wire rack with cooking spray.
  6. Bake: Arrange the frozen sticks on the rack, ensuring space between them. Spray the tops generously with cooking spray. Bake for 10–12 minutes, flipping halfway through, until the crust is deep golden brown and crisp.
  7. Serve Immediately: Remove from the oven and serve straight away while the cheese is molten hot.
