Ingredients:
- 3 medium very ripe bananas, mashed (about 1 ½ cups / 340g)
- ⅓ cup (80ml) vegetable oil (or melted coconut oil)
- ½ cup (100g) granulated sugar
- ¼ cup (50g) packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract (5 ml)
- 1 ½ cups (190g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup (85g) chopped walnuts or chocolate chips (optional)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan (or line with parchment paper).
- In a large bowl, mash the bananas until mostly smooth, with a few small chunks remaining.
- Add the oil, granulated sugar, brown sugar, egg, and vanilla extract to the mashed bananas. Whisk until well combined.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing with a rubber spatula until just combined. Be careful not to overmix.
- If desired, gently fold in the chopped walnuts or chocolate chips.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean (or with a few moist crumbs).
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
