Ingredients:

  • 1 cup (125g) all-purpose flour, sifted
  • 2 tablespoons (25g) granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 cup (240ml) milk (whole milk recommended for richness)
  • 2 tablespoons (30ml) unsalted butter, melted, plus extra for greasing the pan
  • 1 teaspoon vanilla extract

Instructions:

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract.
  3. Gently pour the wet ingredients into the dry ingredients and whisk until just combined. Be careful not to overmix – a few lumps are perfectly fine.
  4. Heat a lightly greased non-stick frying pan or griddle over medium heat.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and bubbles begin to form on the surface. Flip when the edges appear set and the bottom is golden brown.
  7. Serve hot with your favorite toppings.
