Ingredients:
- 1 cup (125g) all-purpose flour, sifted
- 2 tablespoons (25g) granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 large egg
- 1 cup (240ml) milk (whole milk recommended for richness)
- 2 tablespoons (30ml) unsalted butter, melted, plus extra for greasing the pan
- 1 teaspoon vanilla extract
Instructions:
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract.
- Gently pour the wet ingredients into the dry ingredients and whisk until just combined. Be careful not to overmix – a few lumps are perfectly fine.
- Heat a lightly greased non-stick frying pan or griddle over medium heat.
- Pour 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and bubbles begin to form on the surface. Flip when the edges appear set and the bottom is golden brown.
- Serve hot with your favorite toppings.
