Ingredients:
- 2 cups (250g) all-purpose flour
- 1 teaspoon (5ml) baking soda
- ½ teaspoon (2.5ml) ground cinnamon
- ¼ teaspoon (1.25ml) salt
- ½ cup (113g or 1 stick) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- 2 large eggs
- 1 teaspoon (5ml) vanilla extract
- 1 cup (approximately 3 large) mashed ripe bananas
- ¼ cup (60ml) buttermilk
- ¾ cup (85g) chopped walnuts, plus extra for topping
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, cinnamon, and salt.
- In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate bowl, mash ripe bananas. In a measuring cup, add buttermilk
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
- Gently fold in the chopped walnuts.
- Pour batter into the prepared loaf pan. Sprinkle with extra walnuts, if desired.
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean (or with a few moist crumbs).
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
