Ingredients:
- 1 (30 ounce) package frozen tater tots
- 1 tablespoon olive oil
- 1 pound breakfast sausage, crumbled
- 1 medium yellow onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 8 large eggs
- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups shredded cheddar cheese, divided
Instructions:
- Preheat oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add sausage, onion, and bell peppers. Cook, breaking up the sausage, until browned and vegetables are softened. Season with garlic powder, salt, and pepper. Drain off any excess grease.
- Arrange tater tots in a single layer at the bottom of the prepared baking dish.
- Spread the cooked sausage mixture evenly over the tater tots.
- In a large bowl, whisk together eggs, milk, salt, and pepper until well combined. Stir in 1 1/2 cups of the shredded cheese.
- Pour the egg mixture evenly over the sausage layer.
- Sprinkle the remaining 1/2 cup of cheese evenly over the top of the casserole.
- Bake in the preheated oven for 45-50 minutes, or until the eggs are set and the top is golden brown and the casserole is cooked throughout. A knife inserted into the center should come out clean.
- Let stand for 5-10 minutes before slicing and serving.
