Ingredients:
- 1 cup cooked chicken, shredded or diced
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 4 slices of whole grain or sourdough bread
- 1 cup mixed salad greens
- 1/4 cup sliced cucumber
- 1/4 cup sliced tomatoes
- 1 tablespoon olive oil or butter for toasting
Instructions:
- In a mixing bowl, combine shredded chicken, mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Mix until well-coated.
- On two slices of bread, layer the creamy chicken mixture, mixed greens, cucumbers, and tomatoes.
- Place the sandwich halves together and brush the outside with olive oil or butter. Heat the skillet over medium heat.
- Toast the sandwich in the skillet for 2-3 minutes on each side, or until golden brown and crispy.
- Slice the sandwich in half and serve immediately while warm.
