Ingredients:

  • 1 cup cooked chicken, shredded or diced
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 4 slices of whole grain or sourdough bread
  • 1 cup mixed salad greens
  • 1/4 cup sliced cucumber
  • 1/4 cup sliced tomatoes
  • 1 tablespoon olive oil or butter for toasting

Instructions:

  1. In a mixing bowl, combine shredded chicken, mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Mix until well-coated.
  2. On two slices of bread, layer the creamy chicken mixture, mixed greens, cucumbers, and tomatoes.
  3. Place the sandwich halves together and brush the outside with olive oil or butter. Heat the skillet over medium heat.
  4. Toast the sandwich in the skillet for 2-3 minutes on each side, or until golden brown and crispy.
  5. Slice the sandwich in half and serve immediately while warm.
