Ingredients:
- 1 English Cucumber (approx. 14 oz / 400g)
- 1/2 tsp (3g) Kosher salt
- 4 oz (115g) softened cream cheese
- 1 tbsp (15ml) fresh lemon juice
- 1 tbsp (3g) finely chopped fresh dill
- 1/4 tsp (1.5g) garlic powder
- 1 pinch white pepper
- 8 slices (approx. 200g) soft white sandwich bread
- 2 tbsp (30g) unsalted butter, softened
Instructions:
- Use a mandoline to create translucent, uniform cucumber rounds approximately 1/8 inch thick.
- Toss cucumber slices with Kosher salt in a bowl and let sit for 10 minutes to draw out moisture.
- Lay slices on paper towels and pat firmly on both sides until completely dry to the touch.
- In a small bowl, combine softened cream cheese, lemon juice, chopped dill, garlic powder, and white pepper; whip with a fork or whisk until velvety.
- Spread a thin layer of softened butter on one side of every bread slice.
- Apply a generous, even layer of the herbed spread over the butter, ensuring coverage to the very edges of the crust.
- Overlap the dried cucumber slices in a tight, shingle-like pattern across the spread.
- Top with a second slice of bread, spread-side down.
- Use a serrated knife to remove all four crusts in one clean motion and slice into finger shapes.
