Ingredients:
- 3 large ripe bananas (about 1½ cups or 375g mashed)
- ½ cup (120ml) unsalted butter, melted
- ¾ cup (150g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1½ cups (190g) all-purpose flour
- ½ cup (60g) walnuts, roughly chopped (or mixed nuts)
Instructions:
- Preheat your oven to 350°F (175°C).
- Grease the loaf pan or line with parchment paper.
- In a mixing bowl, mash the ripe bananas until smooth.
- Stir in melted butter, then add sugar, eggs, and vanilla; mix until combined.
- In a separate bowl, whisk together baking soda, salt, and flour.
- Gradually add the dry ingredients to the wet mixture; stir until just combined.
- Fold in the chopped walnuts.
- Transfer the batter to the prepared loaf pan.
- Bake in the oven for 60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
