Ingredients:

  • 3 large ripe bananas (about 1½ cups or 375g mashed)
  • ½ cup (120ml) unsalted butter, melted
  • ¾ cup (150g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1½ cups (190g) all-purpose flour
  • ½ cup (60g) walnuts, roughly chopped (or mixed nuts)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease the loaf pan or line with parchment paper.
  3. In a mixing bowl, mash the ripe bananas until smooth.
  4. Stir in melted butter, then add sugar, eggs, and vanilla; mix until combined.
  5. In a separate bowl, whisk together baking soda, salt, and flour.
  6. Gradually add the dry ingredients to the wet mixture; stir until just combined.
  7. Fold in the chopped walnuts.
  8. Transfer the batter to the prepared loaf pan.
  9. Bake in the oven for 60 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
