Ingredients:

  • 3 cups (450 g) Cooked Chicken Breast, shredded or diced
  • 2 large cobs Fresh Sweet Corn (or 1 cup (200g) frozen/tinned corn, drained)
  • 1 cup (120 g) Celery, finely diced
  • 1/2 cup (75 g) Red Bell Pepper, finely diced
  • 1/4 cup (40 g) Red Onion, finely minced
  • 1/2 cup (120 ml) Mayonnaise (full fat)
  • 1/4 cup (60 ml) Plain Greek Yoghurt or Crème Fraîche
  • 1 teaspoon (5 ml) Dijon Mustard
  • 1 tablespoon (15 ml) Fresh Lemon Juice
  • 1/2 teaspoon (2.5 ml) Smoked Paprika
  • 1/4 teaspoon (1.25 ml) Curry Powder (Mild Madras, optional)
  • Fine Sea Salt, To taste
  • Freshly Ground Black Pepper, To taste
  • 2 tablespoons Fresh Chives, snipped
  • 1 tablespoon Fresh Parsley or Dill, chopped

Instructions:

  1. If using fresh corn, heat a dry grill pan or skillet over medium-high heat. Cook the corn cobs, turning occasionally, until lightly charred (about 5-8 minutes). Once cool enough to handle, carefully slice the kernels off the cob using a sharp knife.
  2. In a large mixing bowl, combine the shredded or diced cooked chicken, the prepared corn kernels, diced celery, red bell pepper, and minced red onion. Gently toss these 'dry' ingredients to ensure even distribution.
  3. In a separate small bowl, whisk together the mayonnaise, Greek yoghurt (or crème fraîche), Dijon mustard, and lemon juice until smooth. Add the smoked paprika, mild curry powder (if using), salt, and pepper. Whisk again until the dressing is fully incorporated. Taste and adjust seasoning.
  4. Pour the prepared dressing over the chicken and vegetable mixture. Add the snipped chives and chopped parsley/dill. Use a rubber spatula to gently fold the mixture until everything is thoroughly coated. Avoid overmixing.
  5. Cover the bowl with cling film and refrigerate for a minimum of 30 minutes. This chilling time is essential to allow the flavors to meld and the salad to firm up.
  6. Remove the salad from the fridge and give it a final gentle stir. Taste the salad one last time and adjust salt, pepper, or lemon juice as necessary before serving.
