Ingredients:

  • 2 top sirloin steaks (about 1 pound each)
  • 2 tablespoons dry rub (suggested: Beef Rub or All-Purpose Seasoning)

Instructions:

  1. Pat the steaks dry with a paper towel. Generously cover all sides with the dry rub.
  2. Allow the steaks to marinate for at least 30 minutes or up to 24 hours.
  3. Preheat the smoker to 225°F (107°C).
  4. Place the marinated steaks on the grill. Smoke until the internal temperature reaches 130-135°F (54-57°C), approximately 45 minutes.
  5. Remove the steaks from the smoker and cover with foil. Raise the smoker temperature to 450°F (232°C).
  6. Return the steaks to the smoker. Sear for 3 to 3.5 minutes on each side until the internal temperature reaches about 145°F (63°C) for medium or to your preferred doneness.
  7. Remove the steaks and rest under foil for at least 5 minutes before slicing.
