Ingredients:
- 2 top sirloin steaks (about 1 pound each)
- 2 tablespoons dry rub (suggested: Beef Rub or All-Purpose Seasoning)
Instructions:
- Pat the steaks dry with a paper towel. Generously cover all sides with the dry rub.
- Allow the steaks to marinate for at least 30 minutes or up to 24 hours.
- Preheat the smoker to 225°F (107°C).
- Place the marinated steaks on the grill. Smoke until the internal temperature reaches 130-135°F (54-57°C), approximately 45 minutes.
- Remove the steaks from the smoker and cover with foil. Raise the smoker temperature to 450°F (232°C).
- Return the steaks to the smoker. Sear for 3 to 3.5 minutes on each side until the internal temperature reaches about 145°F (63°C) for medium or to your preferred doneness.
- Remove the steaks and rest under foil for at least 5 minutes before slicing.
