Ingredients:

  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels
  • 1 cup black beans, rinsed and drained
  • 1 cup shredded cheddar cheese or dairy-free alternative
  • 1 pound ground beef or ground turkey
  • 1 packet taco seasoning
  • ½ cup water
  • ½ cup sour cream or Greek yogurt
  • ½ cup guacamole
  • 1 medium avocado, sliced
  • Fresh cilantro, chopped
  • Lime wedges
  • Tortilla chips (optional)

Instructions:

  1. In a skillet over medium heat, brown the ground meat, breaking it apart until cooked through. Drain excess fat if necessary, then add taco seasoning and water. Stir well and let simmer for 5-7 minutes until thickened.
  2. In a large mixing bowl, combine chopped romaine lettuce, cherry tomatoes, corn, black beans, and shredded cheese. Toss gently to mix.
  3. Create a bed of the salad mixture on each plate or in a large serving bowl. Top with cooked taco meat.
  4. Finish with dollops of sour cream and guacamole. Garnish with sliced avocado, cilantro, and lime wedges.
  5. Optional: Add crushed tortilla chips for extra crunch.
