- 2 tablespoons honey or maple syrup (30ml)
- 1 tablespoon lemon juice (15ml)
- 1 ½ cups farmer cheese (360g)
- 1 teaspoon vanilla extract (5ml)
- 1 tablespoon powdered sugar (15g)
- A pinch of salt
- Fresh mint leaves for garnish
- Additional honey for drizzling
Instructions:
- In a medium saucepan, combine mixed berries with honey and lemon juice. Cook over medium heat, stirring gently until berries begin to soften (about 5–7 minutes). Remove from heat and set aside to cool slightly.
- In a mixing bowl, combine farmer cheese, vanilla extract, powdered sugar, and salt. Whisk until smooth and creamy.
- Divide the cheese mixture equally among serving dishes. Spoon the warm berry topping over the cheese base.
- Garnish with fresh mint leaves and a drizzle of honey, if desired. Serve immediately while warm.
