Ingredients:
- 4 cups seedless watermelon, cubed and chilled
- 2 tablespoons freshly squeezed lime juice
- 2 tablespoons honey or agave nectar
Instructions:
- Place the chilled watermelon cubes, lime juice, and sweetener into a high-speed blender. Pulse initially to break down the chunks, then blend on high for 45–60 seconds until the mixture is completely liquefied and frothy.
- For a smoother texture, pour the mixture through a fine-mesh strainer into a large measuring cup with a spout. Alternatively, pour the mixture directly into popsicle molds, leaving 1/4 inch of headspace at the top to allow for expansion during freezing.
- Insert wooden sticks into the molds. Place the molds in the coldest part of your freezer and freeze for at least 4 hours, or until the popsicles are completely firm and have a matte finish.
