Ingredients:

  • 4 cups seedless watermelon, cubed and chilled
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons honey or agave nectar

Instructions:

  1. Place the chilled watermelon cubes, lime juice, and sweetener into a high-speed blender. Pulse initially to break down the chunks, then blend on high for 45–60 seconds until the mixture is completely liquefied and frothy.
  2. For a smoother texture, pour the mixture through a fine-mesh strainer into a large measuring cup with a spout. Alternatively, pour the mixture directly into popsicle molds, leaving 1/4 inch of headspace at the top to allow for expansion during freezing.
  3. Insert wooden sticks into the molds. Place the molds in the coldest part of your freezer and freeze for at least 4 hours, or until the popsicles are completely firm and have a matte finish.
