Ingredients:

  • 1/4 cup (60 ml) honey (preferably raw for depth of flavor)
  • 1 teaspoon (5 ml) vanilla extract
  • 1/4 teaspoon (1 g) salt

Instructions:

  1. Optional but recommended: Chill mixing bowl and beaters/whisk for optimal whipping results.
  2. In a mixing bowl, add mascarpone cheese, cold heavy cream, honey, vanilla extract, and salt.
  3. Using an electric mixer or whisk, beat the mixture on medium speed until soft peaks form; approximately 3-4 minutes.

  5. Taste the icing and adjust sweetness by adding more honey if desired, then whip for an additional 30 seconds.
  6. Use immediately or store in the refrigerator until ready to serve.
