Ingredients:
- 1 cup (225g) full-fat (4%) small-curd cottage cheese
- 2 tbsp (30g) plain Greek yogurt
- 1/4 tsp pure vanilla bean paste or extract
- 1/2 cup (75g) fresh blueberries
- 5 large strawberries, hulled and quartered
- 0.5 fresh peach, sliced into thin wedges
- 1 tbsp raw honey
- 1 tbsp toasted sliced almonds
- 0.5 tsp fresh lemon zest
Instructions:
- Place the cottage cheese, Greek yogurt, and vanilla bean paste into a small mixing bowl.
- Using a small whisk or fork, briskly fold the ingredients together for 30 seconds to aerate the curds and create a lighter, mousse-like consistency.
- In a separate small bowl, briefly toss the strawberries, blueberries, and peach wedges with the lemon zest.
- Layer the prepared fruit over the cottage cheese base, followed by the toasted sliced almonds and a drizzle of raw honey.
