Ingredients:

  • 1 cup (225g) full-fat (4%) small-curd cottage cheese
  • 2 tbsp (30g) plain Greek yogurt
  • 1/4 tsp pure vanilla bean paste or extract
  • 1/2 cup (75g) fresh blueberries
  • 5 large strawberries, hulled and quartered
  • 0.5 fresh peach, sliced into thin wedges
  • 1 tbsp raw honey
  • 1 tbsp toasted sliced almonds
  • 0.5 tsp fresh lemon zest

Instructions:

  1. Place the cottage cheese, Greek yogurt, and vanilla bean paste into a small mixing bowl.
  2. Using a small whisk or fork, briskly fold the ingredients together for 30 seconds to aerate the curds and create a lighter, mousse-like consistency.
  3. In a separate small bowl, briefly toss the strawberries, blueberries, and peach wedges with the lemon zest.
  4. Layer the prepared fruit over the cottage cheese base, followed by the toasted sliced almonds and a drizzle of raw honey.
