Ingredients:
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 3 large eggs
- 1 cup whole milk (at room temperature)
- 3 tablespoons beef drippings or vegetable oil (plus extra if needed)
Instructions:
- Preheat your oven to 425°F (220°C).
- Add a tablespoon of beef drippings or vegetable oil to each muffin cup and place the muffin tin in the preheating oven until the fat is shimmering and almost smoking (about 5-10 minutes).
- In a bowl, whisk together flour and salt. In a separate bowl, beat the eggs and combine with milk. Gradually pour the egg mixture into the flour, whisking until smooth and lump-free.
- Carefully remove the hot tin from the oven and pour the batter evenly into each cup, filling them about halfway.
- Return to the oven and bake for 20-25 minutes until golden brown and puffed up. Do not open the oven during baking!
- Serve immediately with roast beef and gravy.
