Ingredients:

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 cup whole milk (at room temperature)
  • 3 tablespoons beef drippings or vegetable oil (plus extra if needed)

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Add a tablespoon of beef drippings or vegetable oil to each muffin cup and place the muffin tin in the preheating oven until the fat is shimmering and almost smoking (about 5-10 minutes).
  3. In a bowl, whisk together flour and salt. In a separate bowl, beat the eggs and combine with milk. Gradually pour the egg mixture into the flour, whisking until smooth and lump-free.
  4. Carefully remove the hot tin from the oven and pour the batter evenly into each cup, filling them about halfway.
  5. Return to the oven and bake for 20-25 minutes until golden brown and puffed up. Do not open the oven during baking!
  6. Serve immediately with roast beef and gravy.
