Ingredients:

  • 4 cups (950 ml) Good Quality Apple Cider (Pressed, not sparkling)
  • 2 cups (475 ml) Unsweetened Cranberry Juice
  • 1 cup (240 ml) Pomegranate Juice
  • 1/2 cup (100 g) Light Brown Sugar, packed
  • 4 inches (10 cm) Fresh Ginger, sliced (peeled)
  • 4 large Cinnamon Sticks
  • 6 whole pods Star Anise
  • 1 tsp (5 ml) Whole Cloves
  • Zest of 1 Orange, plus 4 slices
  • 4 cups (950 ml) Chilled Ginger Ale (or sparkling white grape juice)
  • 1/2 cup (75 g) Fresh Cranberries (for garnish)
  • 2 halved Orange wheels (for garnish)
  • 6-8 Rosemary sprigs (for garnish)
  • Optional: 1.5–2 cups (350-475 ml) Aged Dark Rum or Brandy

Instructions:

  1. Start the Infusion: Combine the apple cider, brown sugar, ginger, cinnamon sticks, star anise, and whole cloves in a large stockpot.
  2. Heat Gently: Bring the mixture to a gentle simmer over medium heat, stirring occasionally until the sugar is fully dissolved (about 5-7 minutes). Do not let it boil vigorously.
  3. Steep: Once shimmering, remove the pot from the heat. Cover and allow the spices to steep for 30 minutes. This allows the heat to extract the deep flavors.
  4. Strain: Pour the infused base through a fine-mesh sieve or muslin cloth into a clean bowl, discarding all the solids (spices, ginger).
  5. Mix Juices: Add the unsweetened cranberry juice and pomegranate juice to the strained spiced base. Stir well to combine.
  6. Chill Thoroughly (Crucial): Cover the liquid and place it in the refrigerator for a minimum of 2 hours. The base must be icy cold before serving.
  7. Prep Garnishes/Ice: While the punch base chills, prepare the optional ice ring (fill mold with water, cranberries, and rosemary; freeze). Slice the orange wheels.
  8. Combine Components: Just before guests arrive, pour the chilled spiced punch base into your large punch bowl.
  9. Add the Sparkle: Slowly pour in the chilled Ginger Ale or sparkling grape juice. Stir gently—only once or twice—to avoid losing the fizz.
  10. Introduce the Alcohol (Optional): If serving an alcoholic punch, stir in the desired amount of Dark Rum or Brandy now.
  11. Garnish: Add the ice ring (if using), fresh cranberries, orange wheels, and rosemary sprigs to the bowl. Serve immediately with a ladle.
