Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch (2.5 cm) cubes
  • 1/4 cup (60ml) olive oil, extra virgin
  • 1/4 cup (60ml) fresh lemon juice (about 2 medium lemons)
  • 3 cloves garlic, minced
  • 2 tablespoons fresh oregano, chopped (or 2 teaspoons dried)
  • 2 tablespoons fresh rosemary, chopped (or 2 teaspoons dried)
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional, for a little kick)
  • 1 red bell pepper, cut into 1-inch (2.5 cm) pieces
  • 1 yellow bell pepper, cut into 1-inch (2.5 cm) pieces
  • 1 red onion, cut into 1-inch (2.5 cm) pieces
  • 1 zucchini, cut into 1/2-inch thick slices
  • Wooden or metal skewers

Instructions:

  1. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, rosemary, parsley, salt, pepper, and red pepper flakes (if using).
  2. Add the chicken cubes to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, for maximum flavour. This chicken kabob marinade enhances the flavor of the dish.
  3. While the chicken is marinating, prepare your vegetables. Thread the chicken and vegetables onto skewers, alternating ingredients as desired. If using wooden skewers, soak them in water for 30 minutes prior to grilling to prevent burning.
  4. Preheat grill to medium-high heat. Grill kabobs for 12-15 minutes, turning occasionally, until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the vegetables are tender. Or, Preheat oven to 400°F (200°C). Place kabobs on a baking sheet lined with parchment paper. Bake for 20-25 minutes, turning halfway through, until chicken is cooked through. Or, Heat a large skillet over medium-high heat. Add the marinated chicken (and vegetables if you’re doing individual pieces instead of kabobs) and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through.
  5. Let the kabobs rest for a few minutes before serving. This allows the juices to redistribute, resulting in a more tender and flavorful result.
