Ingredients:

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • 1/4 cup (60 ml) fresh lemon juice (about 2 lemons)
  • 2 tablespoons olive oil (30 ml)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano (1 g)
  • 1 teaspoon dried thyme (1 g)
  • Freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Rinse the chicken breasts under cold water and pat them dry with paper towels.
  2. In a mixing bowl, whisk together the lemon juice, olive oil, minced garlic, oregano, thyme, and pepper.
  3. Place chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is coated. Seal or cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).
  4. Preheat your grill or grill pan to medium-high heat.
  5. Remove chicken from the marinade and discard the remaining marinade. Grill the chicken for 5-7 minutes per side, or until fully cooked (internal temperature reaches 165°F / 74°C).
  6. Let the chicken rest for 5 minutes before slicing.
  7. Garnish with fresh parsley and enjoy!
