Ingredients:
- 220 g Almond flour
- 140 g Shredded zucchini (squeezed dry)
- 100 g Eggs, room temperature
- 5 g Baking powder
- 3 g Garlic powder
- 3 g Sea salt
- 15 ml Olive oil
- 15 ml Egg white (for wash)
- 12 g everything bagel seasoning (or sesame seeds/poppy seeds)
Instructions:
- Grate the zucchini using the fine side of the grater and squeeze dry in a kitchen towel.
- Whisk together almond flour, baking powder, sea salt, and garlic powder in a bowl.
- In a separate bowl, beat the eggs and olive oil, then fold in the dried zucchini. Combine wet and dry ingredients to form a dough.
- Divide dough into 6 equal portions, shape into balls, and press a hole through the center.
- Brush tops of bagels with egg white and sprinkle with seasoning. Bake at 375°F (190°C) for 25-30 minutes until golden brown.
- Let bagels rest on the pan for 10 minutes before serving.
