Ingredients:

  • 220 g Almond flour
  • 140 g Shredded zucchini (squeezed dry)
  • 100 g Eggs, room temperature
  • 5 g Baking powder
  • 3 g Garlic powder
  • 3 g Sea salt
  • 15 ml Olive oil
  • 15 ml Egg white (for wash)
  • 12 g everything bagel seasoning (or sesame seeds/poppy seeds)

Instructions:

  1. Grate the zucchini using the fine side of the grater and squeeze dry in a kitchen towel.
  2. Whisk together almond flour, baking powder, sea salt, and garlic powder in a bowl.
  3. In a separate bowl, beat the eggs and olive oil, then fold in the dried zucchini. Combine wet and dry ingredients to form a dough.
  4. Divide dough into 6 equal portions, shape into balls, and press a hole through the center.
  5. Brush tops of bagels with egg white and sprinkle with seasoning. Bake at 375°F (190°C) for 25-30 minutes until golden brown.
  6. Let bagels rest on the pan for 10 minutes before serving.
