Ingredients:
- 2 medium apples (such as Granny Smith, Honeycrisp, or Braeburn), peeled, cored, and diced (approx. 300g / 10.5 oz)
- 2 tablespoons unsalted butter (28g / 1 oz)
- 2 tablespoons granulated sugar (25g / 0.9 oz)
- 1 tablespoon all-purpose flour (8g / 0.3 oz)
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- Pinch of salt
- 1 package (14.1 oz / 400g) refrigerated pie crusts (2 crusts)
- 1 large egg, beaten
- 1 tablespoon granulated sugar (for sprinkling)
Instructions:
- Melt butter in a saucepan. Add apples and cook until softened.
- Stir in sugar, flour, cinnamon, nutmeg, lemon juice, and salt. Cook until thickened. Cool slightly.
- Unroll pie crusts on a lightly floured surface.
- Use a pizza cutter to cut out 6 equal circles from each crust (you may need to re-roll scraps).
- Place a spoonful of apple filling on half of each circle. Fold the other half over to form a half-moon shape.
- Crimp the edges of each hand pie with a fork to seal.
- Brush the top of each hand pie with beaten egg and sprinkle with sugar.
- Place the hand pies in a preheated air fryer basket (work in batches if necessary). Air fry until golden brown and the filling is bubbly.
