Ingredients:

  • 2 medium apples (such as Granny Smith, Honeycrisp, or Braeburn), peeled, cored, and diced (approx. 300g / 10.5 oz)
  • 2 tablespoons unsalted butter (28g / 1 oz)
  • 2 tablespoons granulated sugar (25g / 0.9 oz)
  • 1 tablespoon all-purpose flour (8g / 0.3 oz)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • Pinch of salt
  • 1 package (14.1 oz / 400g) refrigerated pie crusts (2 crusts)
  • 1 large egg, beaten
  • 1 tablespoon granulated sugar (for sprinkling)

Instructions:

  1. Melt butter in a saucepan. Add apples and cook until softened.
  2. Stir in sugar, flour, cinnamon, nutmeg, lemon juice, and salt. Cook until thickened. Cool slightly.
  3. Unroll pie crusts on a lightly floured surface.
  4. Use a pizza cutter to cut out 6 equal circles from each crust (you may need to re-roll scraps).
  5. Place a spoonful of apple filling on half of each circle. Fold the other half over to form a half-moon shape.
  6. Crimp the edges of each hand pie with a fork to seal.
  7. Brush the top of each hand pie with beaten egg and sprinkle with sugar.
  8. Place the hand pies in a preheated air fryer basket (work in batches if necessary). Air fry until golden brown and the filling is bubbly.
  9. Let cool slightly before serving these Air Fryer Apple Hand Pies.
