Ingredients:

  • 1 cup raw almonds (150 g)
  • 4 cups filtered water (950 ml), plus more for soaking
  • 1-2 tablespoons maple syrup or honey (15-30 ml) (to taste)
  • 1 teaspoon vanilla extract (5 ml)
  • A pinch of salt (optional)

Instructions:

  1. Place almonds in a bowl and cover with filtered water. Soak for at least 8 hours or overnight.
  2. After soaking, drain the almonds and rinse under cold water.
  3. In a high-speed blender, combine rinsed almonds and 4 cups of filtered water. Blend on high until smooth and creamy (about 1-2 minutes).
  4. Pour the almond mixture through a nut milk bag or fine mesh strainer into a bowl or pitcher. Squeeze or press to extract as much liquid as possible.
  5. If desired, stir in the optional flavorings like sweeteners, vanilla, or salt.
  6. Transfer almond milk to an airtight container and refrigerate. Use within 4-5 days.
