Ingredients:

  • 1 medium head of broccoli, cut into small florets (approximately 300g / 10.5 oz)
  • 1 tablespoon olive oil (15 ml)
  • 1/4 teaspoon salt (1.5 g)
  • 1/8 teaspoon black pepper (0.6 g)
  • 1/4 teaspoon garlic powder (1.5 g)
  • 4 slices sourdough bread (or bread of your choice, approximately 100g / 3.5oz per slice)
  • 4 tablespoons butter, softened (56 g / 2 oz)
  • 4 ounces Havarti cheese, sliced (approximately 112g / 4 oz)

Instructions:

  1. Toss broccoli florets with olive oil, salt, pepper and garlic powder in a bowl.
  2. Heat a large skillet over medium heat. Add the broccoli and sauté until tender-crisp and slightly browned, about 5-7 minutes. Remove from skillet and set aside.
  3. Butter one side of each bread slice. Place two bread slices, butter-side down, in the skillet.
  4. Top each bread slice with half of the Havarti cheese, then top with the sautéed broccoli.
  5. Add the remaining Havarti cheese. Top with the remaining bread slices, butter-side up.
  6. Cook over medium-low heat until the bread is golden brown and the cheese is melted and gooey, about 3-5 minutes per side. Use a spatula to gently press the sandwiches down for even cooking. You can also use a grill press if you have one.
  7. Cut the sandwiches in half and serve hot.
