Ingredients:
- 8 slices of whole grain bread, cubed (about 10 ounces / 280 grams)
- 1 cup (about 120 grams) shredded sharp cheddar cheese
- 1 cup (about 100 grams) diced bell peppers (mixed colors)
- 1 cup (about 150 grams) diced cooked ham or cooked sausage
- 6 large eggs
- 2 cups (about 480 ml) whole milk
- 1 teaspoon (5 grams) Dijon mustard
- 1 teaspoon (5 grams) garlic powder
- 1 teaspoon (5 grams) salt
- ½ teaspoon (2.5 grams) black pepper
- ¼ teaspoon (1.5 grams) paprika (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- Grease the baking dish with cooking spray or butter.
- In a large bowl, whisk together eggs, milk, Dijon mustard, garlic powder, salt, black pepper, and paprika.
- Layer cubed bread evenly in the baking dish.
- Sprinkle diced bell peppers and cooked ham/sausage over the bread.
- Pour the egg mixture over the bread and veggies.
- Press down gently to ensure everything is soaked in the egg mixture.
- Top with shredded cheese.
- Cover and chill in the fridge for 30 minutes to allow flavors to meld.
- Bake for 40-45 minutes, or until golden brown and the center is set (should reach 165°F or 74°C).
- Let cool slightly before serving.
