Ingredients:

  • 8 slices of whole grain bread, cubed (about 10 ounces / 280 grams)
  • 1 cup (about 120 grams) shredded sharp cheddar cheese
  • 1 cup (about 100 grams) diced bell peppers (mixed colors)
  • 1 cup (about 150 grams) diced cooked ham or cooked sausage
  • 6 large eggs
  • 2 cups (about 480 ml) whole milk
  • 1 teaspoon (5 grams) Dijon mustard
  • 1 teaspoon (5 grams) garlic powder
  • 1 teaspoon (5 grams) salt
  • ½ teaspoon (2.5 grams) black pepper
  • ¼ teaspoon (1.5 grams) paprika (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease the baking dish with cooking spray or butter.
  3. In a large bowl, whisk together eggs, milk, Dijon mustard, garlic powder, salt, black pepper, and paprika.
  4. Layer cubed bread evenly in the baking dish.
  5. Sprinkle diced bell peppers and cooked ham/sausage over the bread.
  6. Pour the egg mixture over the bread and veggies.
  7. Press down gently to ensure everything is soaked in the egg mixture.
  8. Top with shredded cheese.
  9. Cover and chill in the fridge for 30 minutes to allow flavors to meld.
  10. Bake for 40-45 minutes, or until golden brown and the center is set (should reach 165°F or 74°C).
  11. Let cool slightly before serving.
