Ingredients:

  • 1/2 cup (115g) unsalted butter
  • 1/3 cup (110g) honey
  • 1/4 cup (50g) packed light brown sugar
  • 1 tsp (5ml) vanilla extract
  • 1/4 tsp (1.5g) salt
  • 2 1/2 cups (225g) old-fashioned rolled oats
  • 1/2 cup (85g) mini semi-sweet chocolate chips

Instructions:

  1. Combine the butter, honey, and brown sugar in a medium saucepan over medium heat. Stir constantly until the butter is melted and the mixture begins to bubble. Let it simmer for exactly 2 minutes, then remove from heat and stir in the vanilla and salt.
  2. Immediately pour the rolled oats into the saucepan with the syrup and fold them in using a spatula until every grain is glistening and fully coated.
  3. Line an 8x8 inch baking pan with parchment paper. Transfer the oat mixture into the pan and press down firmly using the back of a spatula or a flat-bottomed glass.
  4. Allow the mixture to cool for 5 minutes. Sprinkle the mini chocolate chips evenly over the top, then press them gently into the oats with your palm.
  5. Place the pan in the refrigerator for at least 2 hours. Once firm, lift the bars out using the parchment paper and slice into 12 equal rectangles with a sharp knife.
