Ingredients:
- 1 cup ground pork or chicken (450 g)
- 1 cup finely chopped carrots (130 g)
- 1 cup chopped green beans (120 g)
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon soy sauce (15 mL)
- 1 teaspoon ground black pepper (5 g)
- Salt to taste
- 1 tablespoon vegetable oil (15 mL)
- 25 lumpia wrappers (spring roll wrappers), thawed if frozen
- 1 egg, beaten (for sealing the wrappers)
- Vegetable oil for deep frying
Instructions:
- Heat oil in a skillet over medium heat. Sauté onions and garlic until fragrant.
- Add ground meat; cook until no longer pink. Stir in carrots and green beans; sauté for 5-7 minutes until tender.
- Add soy sauce, pepper, and salt. Mix well and remove from heat. Let cool.
- Take one wrapper and place it on a flat surface with a corner facing you. Spoon about 2 tablespoons of filling near the corner.
- Fold the corner over the filling, then fold the sides in and roll tightly to seal. Brush the edge with beaten egg to seal and place on a plate.
- Repeat with remaining wrappers and filling.
- Heat oil in the skillet to about 350°F (175°C). Fry lumpia in batches for 3-4 minutes until golden brown and crispy.
- Remove and drain on paper towels.
