Ingredients:

  • 1 cup ground pork or chicken (450 g)
  • 1 cup finely chopped carrots (130 g)
  • 1 cup chopped green beans (120 g)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce (15 mL)
  • 1 teaspoon ground black pepper (5 g)
  • Salt to taste
  • 1 tablespoon vegetable oil (15 mL)
  • 25 lumpia wrappers (spring roll wrappers), thawed if frozen
  • 1 egg, beaten (for sealing the wrappers)
  • Vegetable oil for deep frying

Instructions:

  1. Heat oil in a skillet over medium heat. Sauté onions and garlic until fragrant.
  2. Add ground meat; cook until no longer pink. Stir in carrots and green beans; sauté for 5-7 minutes until tender.
  3. Add soy sauce, pepper, and salt. Mix well and remove from heat. Let cool.
  4. Take one wrapper and place it on a flat surface with a corner facing you. Spoon about 2 tablespoons of filling near the corner.
  5. Fold the corner over the filling, then fold the sides in and roll tightly to seal. Brush the edge with beaten egg to seal and place on a plate.
  6. Repeat with remaining wrappers and filling.
  7. Heat oil in the skillet to about 350°F (175°C). Fry lumpia in batches for 3-4 minutes until golden brown and crispy.
  8. Remove and drain on paper towels.
