Ingredients:

  • 4 cups canned sliced peaches, drained (save 1/4 cup of the juice)
  • 1/4 cup peach juice reserved from canned peaches
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 3/4 cup milk

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, gently combine peaches, reserved peach juice, sugar, cornstarch, cinnamon, nutmeg, and lemon juice.
  3. Pour the peach mixture into the prepared baking dish.
  4. In the same bowl, whisk together the flour, sugar, baking powder, and salt.
  5. Add the melted butter and milk to the dry ingredients. Stir just until combined. Do not overmix.
  6. Spoon the topping evenly over the peach mixture.
  7. Bake for 40-45 minutes, or until the topping is golden brown and the filling is bubbly.
  8. Let cool for at least 15 minutes before serving.
