Ingredients:
- 4 cups canned sliced peaches, drained (save 1/4 cup of the juice)
- 1/4 cup peach juice reserved from canned peaches
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, melted
- 3/4 cup milk
Instructions:
- Preheat oven to 350°F (175°C).
- In a large bowl, gently combine peaches, reserved peach juice, sugar, cornstarch, cinnamon, nutmeg, and lemon juice.
- Pour the peach mixture into the prepared baking dish.
- In the same bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the melted butter and milk to the dry ingredients. Stir just until combined. Do not overmix.
- Spoon the topping evenly over the peach mixture.
- Bake for 40-45 minutes, or until the topping is golden brown and the filling is bubbly.
- Let cool for at least 15 minutes before serving.
