Ingredients:
- 2 ½ cups (300g) all-purpose flour, plus more for dusting
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon ground cloves
- ¼ teaspoon ground nutmeg
- ½ teaspoon salt
- 1 cup (225g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- ½ cup (100g) packed light brown sugar
- 2 large eggs
- ¾ cup (175ml) strong brewed coffee, cooled
- ¾ cup (175ml) honey
- ¼ cup (60ml) vegetable oil
- 1 tablespoon orange zest
- 2 tablespoons honey (for glaze, optional)
- 1 tablespoon water (for glaze, optional)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour the cake pan.
- Whisk together flour, baking powder, baking soda, spices, and salt in a large bowl.
- Cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in eggs, one at a time, until well combined.
- In a separate bowl, whisk together cooled coffee, honey, vegetable oil, and orange zest.
- Gradually add the dry ingredients to the wet ingredients, alternating with the coffee mixture, beginning and ending with the dry ingredients. Mix until just combined. Don't overmix!
- Pour batter into the prepared pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- While the cake is cooling, whisk together the honey and water (for glaze). Brush the glaze over the cooled cake (optional).
