Ingredients:

  • 2 ½ cups (300g) all-purpose flour, plus more for dusting
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 cup (225g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • ½ cup (100g) packed light brown sugar
  • 2 large eggs
  • ¾ cup (175ml) strong brewed coffee, cooled
  • ¾ cup (175ml) honey
  • ¼ cup (60ml) vegetable oil
  • 1 tablespoon orange zest
  • 2 tablespoons honey (for glaze, optional)
  • 1 tablespoon water (for glaze, optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour the cake pan.
  2. Whisk together flour, baking powder, baking soda, spices, and salt in a large bowl.
  3. Cream together butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in eggs, one at a time, until well combined.
  5. In a separate bowl, whisk together cooled coffee, honey, vegetable oil, and orange zest.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the coffee mixture, beginning and ending with the dry ingredients. Mix until just combined. Don't overmix!
  7. Pour batter into the prepared pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  9. While the cake is cooling, whisk together the honey and water (for glaze). Brush the glaze over the cooled cake (optional).
