Ingredients:
- 2 tablespoons finely ground coffee
- 1 tablespoon brown sugar
- 1 tablespoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 boneless, skinless chicken breasts (approximately 1.5 lbs / 680g)
- 2 tablespoons olive oil
- Fresh herbs (optional, for garnish)
Instructions:
- Trim excess fat from chicken breasts and pat dry.
- In a mixing bowl, combine ground coffee, brown sugar, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
- Rub the chicken breasts with olive oil, then generously coat with the spice rub, pressing it into the meat.
- Cover the chicken with plastic wrap and chill in the refrigerator for at least 30 minutes to allow flavors to meld.
- Heat the grill to medium-high heat (about 375°F / 190°C).
- Place chicken on the grill and cook for 6-8 minutes per side, or until internal temperature reaches 165°F (75°C).
- Remove from grill, let rest for 5 minutes, then slice and garnish with fresh herbs if desired.
