Ingredients:

  • 2 tablespoons finely ground coffee
  • 1 tablespoon brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 boneless, skinless chicken breasts (approximately 1.5 lbs / 680g)
  • 2 tablespoons olive oil
  • Fresh herbs (optional, for garnish)

Instructions:

  1. Trim excess fat from chicken breasts and pat dry.
  2. In a mixing bowl, combine ground coffee, brown sugar, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  3. Rub the chicken breasts with olive oil, then generously coat with the spice rub, pressing it into the meat.
  4. Cover the chicken with plastic wrap and chill in the refrigerator for at least 30 minutes to allow flavors to meld.
  5. Heat the grill to medium-high heat (about 375°F / 190°C).
  6. Place chicken on the grill and cook for 6-8 minutes per side, or until internal temperature reaches 165°F (75°C).
  7. Remove from grill, let rest for 5 minutes, then slice and garnish with fresh herbs if desired.
