Ingredients:

  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp cracked black pepper
  • 1 tsp lime juice
  • 4 ears of fresh sweet corn

Instructions:

  1. Clean the corn. Remove all husks and silk. Pat the kernels completely dry with paper towels. Note: Dry corn chars better
  2. Whisk the marinade. Combine olive oil, honey, smoked paprika, garlic powder, salt, pepper, and lime juice in a small bowl until the mixture is smooth.
  3. Coat the corn. Use your basting brush to apply the marinade generously. Make sure the glaze gets between the rows of kernels.
  4. Heat the grill. Preheat to medium high heat, around 400°F/200°C.
  5. First sear. Place the corn directly on the grates. Let it sit for 2-3 minutes.
  6. Rotate. Turn the corn a quarter turn every 2-3 minutes.
  7. Final cook. Continue rotating for a total of 8-12 minutes until the kernels are tender and show deep brown charred spots.
  8. Rest. Let the corn sit for 2 minutes off the heat so the glaze sets.
