Ingredients:

  • 1.5 lbs (680g) Mahi Mahi fillets, about 1-inch thick, skin removed
  • 2 tablespoons (30ml) olive oil
  • 2 cloves garlic, minced
  • 1/4 cup (60ml) fresh lemon juice (from about 1-2 lemons)
  • 2 tablespoons (30g) unsalted butter, melted
  • 2 tablespoons chopped fresh herbs (such as parsley, dill, chives, or a mix)
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Lemon wedges, for serving

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Pat the Mahi Mahi fillets dry with paper towels. This helps with browning.
  3. In a small bowl, whisk together the olive oil, minced garlic, lemon juice, melted butter, fresh herbs, Italian seasoning, salt, and pepper.
  4. Place the Mahi Mahi fillets in the baking dish. Pour the lemon herb sauce evenly over the fillets.
  5. Bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork. Internal temperature should reach 145°F (63°C).
  6. Garnish with lemon wedges and serve immediately.
