Ingredients:
- 1.5 lbs (680g) Mahi Mahi fillets, about 1-inch thick, skin removed
- 2 tablespoons (30ml) olive oil
- 2 cloves garlic, minced
- 1/4 cup (60ml) fresh lemon juice (from about 1-2 lemons)
- 2 tablespoons (30g) unsalted butter, melted
- 2 tablespoons chopped fresh herbs (such as parsley, dill, chives, or a mix)
- 1 teaspoon dried Italian seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Lemon wedges, for serving
Instructions:
- Preheat oven to 400°F (200°C).
- Pat the Mahi Mahi fillets dry with paper towels. This helps with browning.
- In a small bowl, whisk together the olive oil, minced garlic, lemon juice, melted butter, fresh herbs, Italian seasoning, salt, and pepper.
- Place the Mahi Mahi fillets in the baking dish. Pour the lemon herb sauce evenly over the fillets.
- Bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork. Internal temperature should reach 145°F (63°C).
- Garnish with lemon wedges and serve immediately.
