Ingredients:

  • 1 large (14 oz / 400g) English cucumber, thinly sliced
  • 1/2 tsp (3g) kosher salt
  • 1/2 cup (115g) mayonnaise
  • 1 tsp (5ml) lemon juice
  • 1 tbsp (3g) fresh dill, minced
  • 1/4 tsp (1g) black pepper
  • 1/8 tsp (1g) garlic powder
  • 12 slices (approx. 1 lb / 450g) white bread, crusts removed

Instructions:

  1. Cut the cucumber into thin, uniform rounds (about 1/8 inch thick).
  2. Lay the slices on a paper towel, sprinkle with salt, and let sit for 5 minutes.
  3. Pat the top of the slices firmly with another paper towel to remove all surface moisture.
  4. In a small bowl, whisk together the mayonnaise, lemon juice, minced dill, black pepper, and garlic powder until smooth and creamy.
  5. Spread a generous, even layer of the mayonnaise mixture onto one side of all 12 bread slices, ensuring you reach the very edges.
  6. Arrange the dried cucumber slices in an overlapping pattern on 6 of the bread slices.
  7. Top with the remaining 6 slices of bread, mayo-side down.
  8. Gently press down and slice into triangles or fingers using a serrated knife for a clean edge.
