Ingredients:

  • 1 cup cucumber, diced (about 1 medium cucumber)
  • 1 cup tomatoes, diced (about 2 medium tomatoes)
  • 1 cup radishes, thinly sliced (about 5 radishes)
  • 1 cup carrots, grated (about 1 large carrot)
  • ½ cup red onion, thinly sliced
  • ½ cup bell pepper (red or green), diced
  • ½ cup fresh mint leaves, chopped
  • ½ cup fresh coriander (cilantro), chopped
  • 3 tablespoons lime juice (freshly squeezed)
  • 2 tablespoons olive oil
  • 1 teaspoon honey (optional)
  • Salt and black pepper, to taste

Instructions:

  1. Grate the carrot.
  2. Sprinkle chopped mint and coriander over the vegetables.
  3. In a small bowl, whisk together lime juice, olive oil, honey (if using), salt, and black pepper until well combined.
  4. Pour the dressing over the salad and toss gently until all ingredients are evenly coated.
  5. Transfer to a serving platter and enjoy immediately or chill for 10 minutes before serving to enhance flavors.
