Ingredients:
- 2 cups (473ml) whole milk
- ½ cup (100g) granulated sugar
- ¼ cup (30g) all-purpose flour
- ¼ teaspoon (1.5 ml) table salt
- 2 large eggs
- 2 tablespoons (30g) unsalted butter
- 1 teaspoon (5ml) vanilla extract
- 1 (12 ounce/340g) box Nilla Wafers
- 3 medium ripe bananas, sliced
- Optional: Whipped cream for topping
Instructions:
- In a saucepan, whisk together milk, sugar, flour, and salt.
- Whisk in the eggs until well combined.
- Cook over medium heat, whisking constantly, until the mixture thickens to a pudding-like consistency (about 5-7 minutes). It should coat the back of a spoon.
- Remove from heat and stir in the butter and vanilla extract. Allow to cool for 1 hour, stirring occasionally to prevent a skin from forming.
- In the baking dish, create a layer of Nilla Wafers on the bottom.
- Top with a layer of sliced bananas.
- Pour a layer of custard over the bananas.
- Repeat layers of wafers, bananas, and custard until all ingredients are used, ending with a layer of custard.
- Cover the dish with plastic wrap, pressing it directly onto the surface of the custard to prevent a skin from forming.
- Refrigerate for at least 2 hours, or preferably overnight, to allow the wafers to soften. Serve chilled, topped with whipped cream if desired. This is a delicious nilla wafer banana pudding recipe.
