Ingredients:

  • 2 cups (473ml) whole milk
  • ½ cup (100g) granulated sugar
  • ¼ cup (30g) all-purpose flour
  • ¼ teaspoon (1.5 ml) table salt
  • 2 large eggs
  • 2 tablespoons (30g) unsalted butter
  • 1 teaspoon (5ml) vanilla extract
  • 1 (12 ounce/340g) box Nilla Wafers
  • 3 medium ripe bananas, sliced
  • Optional: Whipped cream for topping

Instructions:

  1. In a saucepan, whisk together milk, sugar, flour, and salt.
  2. Whisk in the eggs until well combined.
  3. Cook over medium heat, whisking constantly, until the mixture thickens to a pudding-like consistency (about 5-7 minutes). It should coat the back of a spoon.
  4. Remove from heat and stir in the butter and vanilla extract. Allow to cool for 1 hour, stirring occasionally to prevent a skin from forming.
  5. In the baking dish, create a layer of Nilla Wafers on the bottom.
  6. Top with a layer of sliced bananas.
  7. Pour a layer of custard over the bananas.
  8. Repeat layers of wafers, bananas, and custard until all ingredients are used, ending with a layer of custard.
  9. Cover the dish with plastic wrap, pressing it directly onto the surface of the custard to prevent a skin from forming.
  10. Refrigerate for at least 2 hours, or preferably overnight, to allow the wafers to soften. Serve chilled, topped with whipped cream if desired. This is a delicious nilla wafer banana pudding recipe.
